Kefir pancakes have always been a bit greasy for me, thin and not always successful, although I have tried many recipes.

And since I found this recipe, I’m no longer looking for others. Maybe for some of you it will also take the place of one of your favorite recipes.

We will need:

500 gr. flour 21 gr. fresh yeast or 2 tsp. dry yeast 2 glasses of warm milk (I take approximately 450 ml) 2 medium eggs 1 pack of vanilla sugar 2 tbsp. l. sugar 1/2 tsp. salt 2 tbsp. l. vegetable oil into dough oil for frying

For the dough:
We dilute yeast in warm milk, add sugar, 1 cup of flour and leave for half an hour. The dough will rise up like a head during this time.

Beat the eggs lightly with a whisk. Add eggs, remaining flour (I sift it first), vanilla sugar, salt, vegetable oil to the dough. Mix everything well, you get a fairly sticky dough, and leave for another half an hour.

Heat the oil in a frying pan and fry the pancakes over medium heat until they are baked and well inside. It’s a pity the photo doesn’t show how well they rise when frying.

    In pancakes, lumps are not as bad as in pancakes, they do not affect the taste, so if there are a couple left in the dough, it’s okay.

  4. Now you need to let the dough sit a little so that it rises. To do this, place for half an hour in a warm place, wrapped cling film or a clean kitchen towel bowl. 30 minutes will be enough time for the instant yeast to react with the other ingredients. However, it is worth studying the instructions on the yeast package; you may need more or less time to rise the dough.

How to bake pancakes correctly

  1. After half an hour, mix the dough thoroughly again. Heat the oil, do not skimp on the amount, the pancakes will need to drown in it. This is due to the fact that the dough will absorb quite a lot of oil and due to this, the finished pancakes will have a beautiful ruddy color.
  2. Over low heat, it will take about 5 minutes for the oil to reach the desired temperature. It is also better to fry the pancakes over medium heat - then they will bake evenly both inside and outside. It is convenient to place the dough into the pan with a tablespoon; a second spoon can be used to trim the edges and give shape.

How long does it take to fry pancakes?

You need to fry the pancakes for 5 minutes on each side, but the time may vary depending on the features of your stove. To determine the time you need, bake one batch first and try. You may need less/more time.

A recipe from the “the simpler, the tastier” category. Strange as it may sound, the most fluffy yeast pancakes are made with dry yeast diluted in water. Yes, yes, the liquid base in this recipe will be water, not milk or kefir. Dairy products make the dough heavier, making it more difficult for it to rise, but there is no fat in the water, it grows at its own pleasure, just make sure it doesn’t run away! We will prepare delicious fluffy pancakes with dry yeast without dough, immediately mix all the ingredients and let them rise for an hour and a half.

The first thing to do is check the expiration date of the yeast. If it’s already running out, replace it with others; if everything is fine, measure out 1.5 heaped teaspoons and pour into a spacious bowl. Add sugar, salt and a little flour there, 2-3 tbsp. spoons.

Pour warm water into this mixture, first one glass. Stir with a whisk and let stand for 5-7 minutes while you sift the flour and heat another glass of water.

During this time, the granules will dissolve and the yeast will begin to act. A sign that the yeast has begun to “work” will be small holes and bubbles that appear on the surface after a few minutes.

Pour another glass warm water, not hot, but warm. The total volume will be half a liter. Add flour little by little, stirring with a whisk. Not all at once, little by little, carefully mixing each portion, combining the products until a homogeneous structure. The quality and moisture content of flour is always different, so the quantity may vary slightly, decreasing or increasing.

The thickness should be brought to the consistency of very thick sour cream and add eggs one at a time. The first was mixed in, then the next was added.

How to make sure that the yeast dough for pancakes is the right thickness? Once all ingredients have been added and thoroughly mixed until smooth, scoop with a spoon and lift. The pancake dough is sticky, viscous, it will not separate from the spoon, tear, or divide into lumps. If it drains easily, then you need to add flour (although this is unlikely to be needed). If it’s very steep, add a couple of tablespoons of warm water. Cover or cover with film and keep warm: place in a preheated oven with the heat off, in a saucepan with warm water, near the battery. In 20-25 minutes, a whole pile of delicious ruddy pancakes will show off on the plate. You can serve them with sour cream, honey, jam, berry puree, sweet black tea or hot milk.

I really love pancakes. Eat. But don't cook. This is how I come to visit my godmother - I eat to my heart’s content. And no matter how much I cook, it doesn’t work, even if you shoot. In the frying pan they seem to be lush and beautiful, but on the plate they settle and become like some sort of paste, no matter what you season them with.

I asked my godmother what the secret was. And it turns out she doesn’t just cook them. She makes pancakes from yeast sponge dough. The word “sponge” alarmed me a little, and I don’t mess around with yeast. In fact, it turned out that there is nothing complicated in this matter.

The recipe is quite quick, yeast pancakes are prepared with dry yeast, and in the end they turn out fluffy and do not settle even when they cool.

Kitchen appliances and utensils: electric or gas stove; a deep bowl for the dough (it will fit and will increase 2-3 times in volume), a whisk, two spoons (tablespoons), a good frying pan, two forks, a plate for the finished pancakes.

Raw flour is not suitable for us at all, and in a torn bag this product very quickly picks up foreign odors. In addition, check the expiration dates - flour has expiration dates and must be observed.
  • You can take store-bought milk (3.2% fat), or you can take homemade milk. Homemade, they say, tastes better, but for me, it doesn’t matter. If you buy it in a store, make sure it is sold out of the refrigerator. Also check the integrity of the container and the date of final consumption - freshness is important to us. If you buy at the market, first of all pay attention to the cleanliness of the seller’s hands - this is an indicator of the health of the animal that produces this milk. If you notice any spots or rashes, go to another one. In addition, do not hesitate to taste the milk from the bottle you are about to buy - in the market this is the only way to accurately determine its freshness and quality.
  • You can get eggs either in a store or at the same market. Always pay attention to the cleanliness (there should be no traces of droppings) and integrity (there should be no cracks) of the eggs. It would also be a good idea to clarify the “production date” of these. If in doubt, shake the egg over your ear; you will clearly hear a splash inside the rotten egg.
  • Dry yeast can be purchased at any grocery store. I use “pakmaya” - a very good yeast, but in principle any yeast will do. The main thing here is the integrity of the bag of yeast and its freshness. The yeast itself should be poured inside the bag; if damp, it is of no use to us.

  • To remove excess oil from finished pancakes, first place them on a plate with paper towel, literally for a couple of minutes, and only then - into portions.
  • Feel free to add vanilla sugar to the pancakes if you wish, this will make them more flavorful.

Ideally, these pancakes should be served while still warm, but when cooled down they are also very good. This is the perfect breakfast, afternoon snack, or dessert after dinner or lunch. This dish goes well with compote, milk, cocoa, and regular tea.
