I remember well how we wrote down the recipe in a common notebook, how we distributed it into groups, who would bring what products. The curds were made in a semi-ceremonial atmosphere. For some reason, it was very important to make diamond-shaped notches on top. Then they were fried in huge frying pans. I found the final product to be harsh and taste strange. As I now understand, due to excess flour. But we were given marks not so much for taste, but for appearance. The curds really looked perfect. In turn, my mother fried cottage cheese almost completely without flour. And he didn’t keep his uniform. Within an hour, having cooled down, they came in waves and tasted suspiciously like cottage cheese fried with eggs. Now I understand that the truth, as always, is somewhere in the middle. And this is what curds that are close to ideal look like, a classic recipe, in a frying pan, without additives, no raisins, dried cranberries or lemon zest. The simplest, time-tested recipe. He has no secrets. The only thing you need to remember: in cottage cheese dishes, the quality of the cottage cheese plays a decisive role. And its fat content. The ideal breakfast is Sunday breakfast. No one is in a hurry, everyone lazily wanders around the house in pajamas, looking forward to a whole day of doing their favorite things. In addition, classic recipes are easy and simple to modify, introducing your favorite notes. Are you crazy about lemons? Then add a little lemon zest to the dough, and the curds will acquire a fresh aroma that goes so well with cottage cheese. Add some fruits or berries to the dough, or, on the contrary, herbs or garlic. The good thing about the classic recipe is that you can use it to make a variety of various options dishes, and all of them will be successful, you just need to remember that there should not be too much additive - for 400 grams of cottage cheese it is enough to add just a handful of berries, pieces of fruit or herbs so that the curds get a new look. Add more - the dough may leak, and even if it turns out tasty, it’s unlikely to be beautiful. But it's time to start cooking, otherwise the family risks being left without breakfast.

Ingredients

  • Cottage cheese - 360-400 grams
  • Egg - 2 pieces
  • Soda - 0.25 teaspoon
  • Salt - 1 pinch
  • Sugar - 1 teaspoon
  • Flour - 3-4 heaping tablespoons
  • Vegetable oil - for frying

Instructions

I take 2 packs of cottage cheese, 180 grams each, usually the fat content is up to 9%. I prefer to choose cottage cheese in paper packages, it is quite moist and tasty, and I always look for the country of origin - Belarus - Belarusian dairy products are of excellent quality, they never disappoint, be it cottage cheese, milk, butter, kefir or sour cream.

I add a tablespoon of sugar, two eggs, and a small pinch of salt at once. In addition, to make the curds fluffy, I put soda - literally on the tip of a teaspoon, no more than 4 parts.

Now you need to arm yourself with a spoon or fork and thoroughly mash the cottage cheese so that there are no lumps. Add flour, 3 heaped spoons. You don’t need too much flour, as the curds will become hard and tasteless when they cool.

Of course, if you add more flour, then sculpting them will be much more convenient - and the dough will not stick to your hands, and in general, it will be easier to shape the dough. But taste qualities suffer, so it’s better to put a bowl of water next to it and wet your hands before sculpting.

Heat a frying pan with oil, form curds, and fry on each side - first under the lid, and then turn over and finish frying without.

Serve with sour cream, berries, condensed milk or liquid honey. Very tasty, try it!
