Extra No. 2 and Extra No. 3 are of lower quality; these flakes are cheaper and faster to prepare because they are made from half or broken grains. The next type of oatmeal is Hercules. They undergo the maximum number of treatments (rolling, separation from the kernel, steaming).

Popular options

When making cookies, the only thing that matters is what you want to end up with. Rolled oats will cook faster and the cookies will be softer, while unprocessed oatmeal will be tougher and, if there is a lot of it, will be crunchy.

As a sugar substitute, you can use honey, dried fruits (not to be confused with candied fruits, there is a lot of sugar), sweet fresh berries, syrups (agave, grape, barley malt).
