  • 100 ml heavy cream (preferably 35%)
  • 1 sheet of gelatin
  • 100 g smoked salmon

Preparation:

Cut the salmon into small cubes, sprinkle with lime juice, pepper and add a little zest. Mix everything thoroughly and put it in the refrigerator.

You will need:

  • 2 tbsp. l. olive oil
  • 2 tsp. tablespoons lemon zest
  • 1 tbsp. l. lemon juice
  • 170 g cream, curd or goat cheese
  • 2-3 cloves of garlic (optional)

  • 1/2 cup arugula
