  • 2 glasses of kefir or yogurt;
  • 50 gr. butter and sunflower oils;
  • 1 kilogram of regular wheat flour;
  • 1 packet of dry yeast;
  • pepper and salt to taste.

For the filling you need to take:

  • 8 boiled eggs;
  • 100 grams of green onions;
  • 50 grams of butter;
  • salt to taste.

Preparation:

  1. For the dough, all the eggs are broken into a deep container and beaten with a mixer, a whisk, or just two forks with salt until a thick foam appears.
  2. Carefully add 50 grams of butter, 50 grams of vegetable oil, kefir or yogurt to the resulting mixture.
  3. Flour is mixed with pepper and dry yeast. The resulting mixture is added to the egg mass and mixed thoroughly.
  4. The dough is allowed to rise twice, with the obligatory increase in volume by approximately two times. The finished mass should lag well behind your hands. If it remains liquid, add a little more flour.
  5. For the filling, all the products listed in the recipe are finely chopped and mixed into a homogeneous mass.
  6. The dough is divided into individual pieces, approximately the size of a fist. The pie blank is rolled out to a thickness of 5-6 millimeters.

For pies, I immediately begin to prepare a simple yeast dough, much earlier than the filling itself, since such dough requires time to rise and proof. I heat the water slightly and crumble the raw yeast into it.




I pour granulated sugar into the future dough into water that already contains yeast. Yeast mixes well with granulated sugar and the dough will rise perfectly and rise in volume.




I add vegetable oil.






I add flour and now finally knead the soft dough. The dough itself, as you can see, is not difficult to knead, so I often fry these beautiful pies. I put the bowl with the dough aside. The dough will begin to rise immediately in a warm room, so turn on the oven. Next to it, the dough will increase in volume quickly. There is another secret method that I have used more than once: I take a very deep bowl, pour good hot water into it and now put the bowl with our dough into this water. In such an environment, the dough will also feel great and grow quickly.




After 40-60 minutes the dough will be tall and I start working hard with it.




While the dough was rising and rising, I chopped clean green onions.






I boiled the eggs and also chopped them finely with a knife.




I mixed onions with eggs, it turned out to be simple, and at the same time a delicious filling for pies. I just salt the filling well, as the eggs will be a bit bland in the pies.




I pinch off a small piece of dough, lightly roll it out with a wooden rolling pin and put a spoonful of egg-onion filling in the middle. If you add too many eggs and onions, it will be more difficult to form a pie, so don't overdo it.




I form all the pies from the dough, making them not very large, since during frying they will become twice as large, because the dough is yeast.






I heat the oil in a frying pan, turn the heat to medium, on which I will then fry the pies. If you immediately make the fire strong, put the pies in it, and then turn the fire quieter, the pies will still fry very quickly on top, but will not be baked inside. This is very important and keep this in mind when frying.




I fry the pies with egg and onion on both sides, turn them over and fry in a frying pan until done.




Place the pies on a large plate and let them cool slightly.

You should start with the test:

  1. The milk is heated over low heat to 50 degrees. Yeast is added there and left to infuse for about 10-30 minutes (until foam forms).
  2. In a separate container, beat eggs with sugar and salt. Milk with yeast is added to beaten eggs.
  3. Flour is gradually added to the resulting mixture, kneading the dough at the same time. This way, lumps of flour should not form, and the dough should become homogeneous. The resulting dough is set aside, covered with a warm, damp cloth and allowed to rise. After the first rise, the dough is kneaded and set aside again for the second rise.
  4. After this, the filling for the pies is prepared. Boil eggs hard (if present) or finely crush cottage cheese. Next, wash the onion under the tap and finely chop it. After this, it is placed in a hot frying pan where it is fried for about 1 minute (without oil) - this will allow the greens to settle. You can add sorrel or dill to the onion - to taste. After which the onion is mixed with other ingredients, salt and spices are added. This way you can make pies with cottage cheese and green onions, eggs and onions, or just with onions.
  5. The dough is removed from the bowl, divided into 40 equal parts, after which the individual parts are rolled out into pancake shapes. Next, they put the filling on them - about 2.5-3 tablespoons per 1 “pancake” and wrap it in the shape of a pie.
