A classic recipe for pancakes with milk and soda. Recipe for pancakes with slaked soda

Baking soda is used everywhere for baking, but housewives do not question the need for the product. The additive ensures airiness and proper loosening of the dough, which makes baked goods tastier.

How to bake

NaHCO3 is the formula of the food additive in question, which can significantly improve the taste of baked goods. Without the use of soda powder, the dough turns out sticky, dense and lumpy in structure. Despite the application, housewives constantly make mistakes, among which are:

  • Adding powder without first slaking is wrong, since the taste of the finished baked goods will have an aroma and an acidic aftertaste. Everything is explained by the properties of the additive - when quenched, the acid is destroyed. Subsequently, heat treatment promotes the release of carbon dioxide - and this loosens the dough and makes it fluffy.
  • Soda should be quenched with certain products that will not impart an additional and unpleasant taste in the future. It is allowed to use vinegar, lemon juice, and fermented milk products.
  • It is not recommended to use Art. l. and do this over a bowl of prepared dough. When sodium bicarbonate gets into the dough in excess, it gives an unpleasant aftertaste. To prevent this from happening, it is better to use a glass or a small cup - this way excess slaked soda will not get into the dough.

These are the main points of proper dough preparation. Otherwise, you should follow the recommendations from the recipe.

Do you need a food additive for pancakes?

How to cook fluffy pancakes with milk recipe with soda - a complete description of the preparation so that the dish turns out very tasty and original.

For those who eat and bake pancakes, this dish is the most common today. And some 200–300 years ago, eating and baking pancakes was required only during special periods. The main “pancake” holiday in Rus' is, of course, Maslenitsa. It was organized as a farewell to winter. On this day, pancakes were fried in every hut, then eaten by the whole village. Our ancestors associated the fragrant round pancake with the sun, the parent of all life on Earth.

Nowadays, you don’t need a reason to bake pancakes. Housewives can use any pancake recipe to please their family with a delicious and very nutritious dish for breakfast. Pancakes made with milk and soda are perhaps the most common. Yeast dough takes more time, and besides, you can’t make thin pancakes from it. Without any baking powder, the pancake turns out much tougher. But soda is just what you need: it makes the product fluffy, but allows it to remain thin, and you always get a golden crispy crust around the edges. Exactly what children and adults love.

Juicy thin pancakes with milk are prepared from those products that are almost always available in the kitchen. In our case, the list of ingredients is as follows:

  • 3 medium-sized chicken eggs;
  • 0.5 liters of milk of any fat content (but not skim);
  • odorless vegetable oil - 100 milliliters for pancake dough and 20 milliliters for greasing the frying pan;
  • 10-20 grams of sugar;
  • one pinch each of soda and salt (without adding vinegar);
  • vanilla – 1 sachet (you can use other flavorings, but only for sweet pancakes);
  • 250 grams of white wheat flour, sifted.

This set of products for pancakes is made with milk, and they turn out optimal for wrapping the filling in them. Since there is minimal sugar in the dough, the pancakes will turn out quite bland. We suggest making a festive filling - from red fish. For this we need the following products:

  • 300 grams of smoked or lightly salted red fish (trout, chum salmon, salmon);
  • 1 fresh medium-sized cucumber;
  • 1 bunch of dill (or other herbs of your choice);
  • 200 grams of Philadelphia cheese.

Accordingly, if you prepare pancakes using this recipe for sweet fillings, increase the portion of sugar in the dough to 50 grams.

Cooking process

To prepare pancakes, you can prepare the filling in advance, as well as knead the dough. Let's do the test:

  1. Pour the milk into a large bowl and warm it slightly to body temperature in the microwave or on the stove.
  2. Beat chicken eggs into the liquid and mix thoroughly with a whisk or even a mixer until the mass begins to foam.
  3. Add sugar and vanilla if you are making a sweet milk pancake, add salt and soda. Again, vigorously beat the base for our pancakes. At the end, pour in vegetable oil - 100 grams. Take the odorless refined one, and it doesn’t have to be sunflower - you can use corn or olive oil.
  4. Flour must be added to this mixture. Before this, sift it into a separate bowl, and pour it into the milk in portions, a couple of spoons at a time, stirring occasionally.
  5. Knead the batter and place the frying pan on the fire. For about 5-10 minutes, the pan will heat up (be sure to be pre-greased with oil), and the dough will swell.
  6. When the pan is hot enough, scoop out some dough with a ladle and spread it over the surface of the pan in a thin, even layer. If necessary, add a little more until the pancake “sets”.
  7. After 1.5-2 minutes, turn the pancake over to the other side and fry until golden brown.
  8. Thus, overcook all the pancakes and put them in a stack without lubricating them with anything.

When frying pancakes, the heat should not be too low or too high. It is optimal to use a special frying pan with low sides and a thin bottom. But if you don’t have one, you can use a regular frying pan with a non-stick bottom. When the stack of pancakes solemnly rises on the plate, we proceed to the filling:

  1. Fillet the fish - remove bones, spine, skin. Cut the fish fillet into thin strips.
  2. Wash the greens, dry and chop very finely.
  3. The cucumber can be peeled if it is thick and bitter, or left with the skin on. Rinse it and also cut into long strips (straws).
  4. Place a little soft cream cheese on the bottom third of the pancake, sprinkle chopped herbs on top, and place a few pieces of red fish.
  5. Roll the pancake into a tight tube; the edges can also be greased with cheese so that they do not fall apart. Wrap all the other pancakes the same way. Carefully place in a heap on a plate and sprinkle chopped dill on top.

The filling can be replaced and made sweet. For example, add jam, curd mass, marmalade or fresh fruit inside.

How to prepare a recipe for pancakes with slaked soda - a complete description of the preparation so that the dish turns out very tasty and original.

  • 3 medium-sized chicken eggs;
  • 0.5 liters of milk of any fat content (but not skim);
  • odorless vegetable oil - 100 milliliters for pancake dough and 20 milliliters for greasing the frying pan;
  • 10-20 grams of sugar;
  • one pinch each of soda and salt (without adding vinegar);
  • vanilla – 1 sachet (you can use other flavorings, but only for sweet pancakes);

  • 300 grams of smoked or lightly salted red fish (trout, chum salmon, salmon);
  • 1 fresh medium-sized cucumber;
  • 1 bunch of dill (or other herbs of your choice);

  • chicken eggs – 3 pcs.;
  • vegetable oil - 100 g for dough and 20 g for frying;
  • sugar – 1 tablespoon;
  • white wheat flour - a glass (250 grams);
  • salt and soda - a pinch;
  • vanillin - sachet (optional).

Preparing pancakes with milk and soda is as follows:

First you need to pour the milk into a large cup. Beat in chicken eggs, mashed with sugar, and pour in vegetable oil. Next add a pinch of soda (can be replaced with baking powder) and salt. Vanilla will give the pancakes a pleasant caramel aroma. The resulting mass must be mixed thoroughly. Flour should be added a little at a time, stirring constantly to avoid lumps.

Next, use a small ladle to pour the dough into a heated pancake pan. Using a circular motion, distribute it over the surface. It is better to fry pancakes over low or medium heat. Ingredients for pancakes with milk and soda

First, you need to heat the milk to about 40°C, and then pour it into a bowl, in which we will knead the pancake dough. Beat eggs into a bowl.

Add salt and sugar and thoroughly beat the mixture with a mixer or blender until fluffy.

It should be noted that if you want sweet pancakes, you can add more sugar.

Then you should quench the soda with vinegar.

It is better to do this in some small but deep container: in this case, less vinegar will be needed than in the usual process in a spoon.

Beat the dough thoroughly until smooth and liquid.

Flour is different everywhere, so it is impossible to give the exact amount of milk. If the dough turns out thick after beating, add more liquid. The final and correct consistency of the dough for such pancakes is the consistency of very liquid sour cream or kefir. And this is done for a specific purpose: the fact is that only with a sufficiently liquid consistency do the pancakes turn out thin, delicate and delicate, as required by the recipe. If the dough is too thick, you will not achieve delicacy.

Add sunflower oil to the dough and beat thoroughly. Then let the dough stand for 20 minutes so that it is saturated with oxygen as the soda reacts.

Pour the batter into a well-heated and greased frying pan or pancake maker in a thin layer.

Bake the pancake on one side until all the bubbles on the surface burst.

The pancakes bake quite quickly, be careful not to overcook them.

Pancakes with milk and soda are ready!

If desired, they can be greased with butter. Don't forget to brew fresh aromatic tea.

As you know, when preparing the dough, almost the same ingredients are used, but for some housewives the pancakes turn out lacy, while for others they are dense, like cardboard, and are poorly baked. The whole secret of a delicious dish lies in the frying pan. It must have a thick bottom so that as a result of the temperature difference from the cold dough, the surface does not have time to cool.
  2. All ingredients should be at room temperature. Two hours before you start cooking pancakes, you need to remove the food from the refrigerator so that they warm up properly. This rule especially applies to eggs.

  5. After kneading, the dough should be left on the table for half an hour so that the flour swells. Then pancakes with soda and milk will not tear when baking.

Pancakes with milk and soda

Cooking pancakes with milk and soda is a classic recipe used by many housewives. There are many pancake recipes, one of the main ingredients in each of them is baking soda. Without this component, the dough will not turn out airy and light. Let's look at a few popular recipes.

Recipe with step-by-step photos

You don't have to put in a lot of effort to make a stack of pancakes. Of course, you will have to spend time, but if you follow the recipe correctly, the result will justify all the time spent. Many housewives prefer to prepare pancake dough with milk. There are recipes based on kefir, whey or even water. But it is milk that makes the dough tender and tasty.

Consider the classic recipe for pancakes with milk:

  1. Take 3 eggs and add salt and sugar. The amount of these seasonings is determined based on the filling. If it is sweet, for example, cottage cheese with raisins, then add a small pinch of salt and more sugar to the dough. And, conversely, for a salty filling, such as meat or mushroom, take 1 teaspoon of sugar and a few pinches of salt. Beat everything until fluffy using a mixer, blender or a regular whisk.
  2. Take 2 cups of sifted flour, 700 ml of milk and add to the beaten egg mixture. We do this in small portions, one at a time, stirring all the time. If you pour out all the flour at once, it will be difficult to mix the dough so that it becomes airy.
  3. Pour 1 teaspoon of baking soda into the dough and then squeeze out a little lemon juice (about 1 teaspoon, pour in a little lemon juice, baking soda and then squeeze out a little lemon juice. Stir the dough until it comes together). This is done so that the soda reacts with the acid and, as a result, carbon dioxide begins to be released. This is what makes the dough airy.
  4. Add a few tablespoons of sunflower oil and mix the dough again. Due to this, the dough will not stick to the pan when frying.

After this the dough is ready. It may seem too runny, but don't add more flour. Fry the pancakes on both sides and add the filling.

Pancakes with milk, soda and vinegar

The combination of baking soda and vinegar is most often found in recipes. Soda itself will not have any beneficial effect on the dough. In order for carbon dioxide to begin to be released, which loosens the dough, the soda must react with the acid. This can be lemon juice and other products, but vinegar is most often used.

Consider a recipe for pancakes with soda and vinegar:

We wrap the filling in pancakes and rush to please our loved ones with fresh pancakes.

Recipe for thin pancakes with holes

Thin pancakes with holes - this is exactly the result that housewives strive to achieve. Such a dish will become a real delicacy, because they will simply melt in your mouth and will be delicious even without filling. However, achieving such a result is not so easy. Many people successfully prepare choux pastry by adding boiling water to milk. The result is truly thin, lacy pancakes. Let's look at the features of this recipe.

So, the secret of the dish is boiling water, it reacts with baking soda, which provides the finished pancakes with a fine structure and holes.

Preparation takes place in several stages:

  1. Place 250 ml of water on the fire and bring it to a boil. While it boils, we deal with other products.
  2. Take 1 glass of milk at room temperature (heat if necessary), add 2 eggs, salt and sugar to taste. Beat with a mixer, blender or whisk.
  3. Add 2 cups of flour and mix until there are no lumps and the dough has a uniform consistency. As a result, the dough should have the same consistency as for pancakes.
  4. Take a glass of boiling water, pour 1 teaspoon of baking soda into it, quickly mix and pour into the dough. Stir again and leave to brew for 40 minutes.
  5. Then add 2-3 tablespoons of sunflower oil, mix and start frying. To achieve an openwork effect, pour the dough in a very thin stream to form a thin layer.

Today we will cook incredibly delicious thin pancakes using soda. Yes, yes, don’t be surprised, I myself couldn’t think that it was possible to make such pancakes, but I assure you that absolutely everyone will definitely like them. They are extremely easy and quick to prepare, fry perfectly and turn over perfectly the first time.

And if you like pancakes with crispy edges, then this will be just a godsend for you. Of course, they are not entirely suitable for stuffing, but as a separate dish for breakfast or a snack, this is an ideal option. These wonderful pancakes are best served with sour cream, jam, jam or condensed milk.

  • 300 - 320 g wheat flour
  • 750 ml water (milk or whey)
  • 3 raw eggs
  • 50 - 70 g sugar
  • a pinch of salt
  • 1 teaspoon baking soda
  • 1 teaspoon vinegar for extinguishing
  • 20 ml vegetable oil + for frying

Cooking method

First of all, beat the eggs with sugar, add water, add a little salt and add sifted flour in small portions. Knead the homogeneous, thin pancake batter until the lumps disappear. It is more convenient to do this using a blender at low speed. At the very end of the kneading, add vegetable oil and soda, previously quenched with vinegar, and mix thoroughly again.

Heat the frying pan, grease it with oil and pour in the dough (remember that the thickness of the pancakes directly depends on the quantity), distributing it over the entire area, slightly going over the sides to get rosy edges. Fry the pancakes on soda in the usual way on both sides until tender and fully cooked. Bon appetit.

The best soda pancake recipes that are sure to work

Almost everyone can make pancakes with soda. The only pagan holiday that has been successfully adopted by Christians is Maslenitsa. It ends with the ritual of burning an effigy, symbolizing the cold winter. And a week before this, housewives begin baking pancakes using all kinds of fillings. And they always want to surprise their family using a recipe for making pancakes that will please everyone. To do this, various types of flour are used, yeast is added to the dough, and pancakes are baked, both custard and lacy. But there is one wonderful recipe, suitable even for beginner cooks - delicious pancakes with soda.

How to extinguish soda correctly

Housewives often wonder why they should extinguish soda, and whether it is worth doing it at all. The answer from professional chefs in this case is categorical - it is not only necessary, but even necessary. Proper use of soda will give baked goods an airy, porous texture and a large increase in volume. You can extinguish soda:

  • vinegar (not to be confused with essence!);
  • lemon juice;
  • fermented milk liquid products.

There is no need to increase the proportions given in the recipe; excess soda can ruin the taste of the baked goods. A little advice - do not dissolve baking soda in a spoon over a container with dough, there is a high risk of spilling vinegar or juice, which also does not improve the taste of the finished pie or cookies. It is best to use a small glass, this will ensure that nothing extra gets into the dough.

Housewives often wonder why they should extinguish soda, and whether it is worth doing it at all.

Why use soda when baking?

The first thing every novice cook needs to understand is that only baking soda can be used when kneading dough! When baking in an oven, in a frying pan or in a slow cooker, carbon dioxide is released, which helps to loosen the dough.

We should not forget that the correct dissolution of soda plays an important role. Without this process, acid will be released into the dough during baking, which will significantly spoil the taste. Without baking soda, baked goods will certainly turn into a flat, unpleasant to the touch and compressed substance, which, at a stretch, can be called a pie or cookies.

This article has helped many gardeners stop working hard on their plots and still get a bountiful harvest.

I would never have thought that in order to get the best harvest on my plot in my entire “dacha career”, I just need to stop working on the beds and trust nature.
For as long as I can remember, I spent every summer at the dacha. First at my parents' house, and then my husband and I bought our own. From early spring to late autumn, all free time was spent on planting, weeding, tying, pruning, watering, harvesting and, finally, preserving and trying to preserve the harvest until next year. And so on in a circle.

What is the best substitute for soda?

The situation when the stomach demands a holiday in the form of a rosy delicacy, but the necessary and important ingredient - soda - is not at hand is familiar to everyone. Can it be replaced, and with what?

It turns out that instead of soda you can use:

  • mineral water with gas;
  • dry yeast);
  • alcoholic drinks (vodka, rum, cognac);
  • beer (preferably light);
  • baking powder (which contains the same soda).

Another option is ammonium carbonate, but in the absence of experience it is better to resort to this substance as a last resort if there is no other choice. It is worth considering that when exposed to temperature, an unpleasant, pungent odor is released, but it will quickly disappear.

Pancakes are a great idea not only for tea, but also for a full breakfast. Adults and children love them, and most importantly, their preparation does not take much time. If you make them with the whole family, your meal will be even more fun with our tips and recipes.

  • 3 medium-sized chicken eggs;
  • 0.5 liters of milk of any fat content (but not skim);
  • odorless vegetable oil - 100 milliliters for pancake dough and 20 milliliters for greasing the frying pan;
  • 10-20 grams of sugar;
  • one pinch each of soda and salt (without adding vinegar);
  • vanilla – 1 sachet (you can use other flavorings, but only for sweet pancakes);

  • 300 grams of smoked or lightly salted red fish (trout, chum salmon, salmon);
  • 1 fresh medium-sized cucumber;
  • 1 bunch of dill (or other herbs of your choice);
