Step-by-step preparation of Chinese cashew chicken

  1. Take an egg and separate the white from the yolk. We don't need the yolk, so you can pour it into a glass and use it later for scrambled eggs. Beat the whites with a whisk.
  2. Cut the chicken fillet into medium cubes or strips - whichever you prefer. Place the chicken in a bowl.
  3. Add starch and whipped egg white to the fillet and mix. We add salt, but don’t get carried away - the finished dish will contain soy sauce, and it is very salty, don’t forget about it.
  4. Peel the ginger root, grate it or finely chop it with a knife.
  5. Chop green onions.
  6. Cut the red bell pepper into strips or cubes (it is better that the cut is the same shape as the fillet).
  7. Heat a deep frying pan or wok with vegetable oil over high heat, place the chicken fillet in the resulting batter on it and fry, stirring continuously, for exactly one minute. By this point, the bird's meat should turn white.
  8. Remove the fillet from the pan, and fry the green onions and ginger in the remaining oil for one or two minutes.
  9. Add the bell pepper to the pan, stir and fry for another minute.
  10. Pour soy sauce into the pan, return the chicken fillet there and add cashew nuts.
  11. Now pour apple juice and hot chili sauce into the meat and vegetables, mix all the ingredients well and simmer over high heat for five minutes.

Chinese-style chicken with cashew nuts, the recipe for which we have just discussed, is traditionally served hot, straight from the heat, as an independent dish. But if you belong to the category of people who have no idea how you can eat meat without a side dish, boil the fluffy rice in advance.

Recipe for chicken fillet with cashew nuts.

Well, we’ve reached our favorite Thai cuisine. Thai Cashew Chicken is one of many recipes that came to Thailand from China. The original name of the dish is “Gai Pad Med Mamuang Himaphan”. The recipe for fried chicken with cashew nuts is very popular not only in many Thai restaurants, but also almost all over the world. This is a very simple dish that does not require any special culinary skills from you, but it can easily win your heart with its spicy aroma, mild spiciness and indescribable texture.

First, let's look at the ingredients.

You and I know very well that the best cashews in the world are grown in Thailand, mainly on the island of Phuket. Mamuang himaphan just means cashew nuts, but the main confusion is often associated with this, since the translation of Himaphan is an analogy to the Garden of Eden, and cashew nuts in their unpeeled form resemble small mangoes, therefore, literally translated, cashew is “Heavenly mango”, which can be translated into Russian as “Heavenly taste” or “Culinary heaven”. Here's a culinary pun :-)

For cooking we will need these same “Paradise mangoes”, that is, cashews. If it is difficult to buy raw nuts, then you can easily get by with ready-roasted ones (not salted, of course), only in this case, you won’t need to pre-roast them, but simply add them at the end of cooking.

In addition to cashews, I recommend paying attention to the hot peppers that we will use for our dish. It should be spicy, but should not have a pronounced bitterness that dominates the taste. In the original, several types of hot pepper should be added. Use either small chili peppers, or your favorite proven variety of already ground pepper flakes, then you will be able to appreciate this spiciness and taste.

Shredded chicken fillet can be breaded in flour or tempura mixture before frying. This will keep the chicken juicier and add extra flavor. This time we cooked it in a hurry, so we didn’t use breading, and in general we simplified the recipe a little, but in the near future we will improve and share photos of cashew chicken prepared according to all the rules of Thai cuisine.

Chicken fillet with cashew nuts captures the eye with its bright colors - it's beautiful, it's bright, it brings happiness and harmony to our lives. Little tricks

1. The main ingredient in this dish is cashew nuts. You can use already roasted cashews or raw cashews that need to be roasted.
2. Dry chilies need to be roasted before cooking until they turn deep red and crispy. They do not add any special spice to the dish, only aroma.
3. If you don't like chicken, replace it with shrimp or beef.
4. Vegetarians can easily prepare this dish with tofu and soy sauce.
5. Meat can be fried as it is, but it is better to first roll the pieces in flour. This will ensure that the meat retains its juices and the flour will absorb more of the sauce. The dish will turn out juicy and tasty. You can make a batter from one egg and one tablespoon of corn flour.
6. It is better to use corn flour, but if you don’t have it, wheat flour will do.
7. My recipe uses straw mushrooms, which may not be sold at home. Replace them with frozen champignons or oyster mushrooms. Or you can not add it to your dish at all.
8. In Thailand, they use a wok frying pan for this dish, but you can get by with a regular one, just stir all the ingredients often.
9. For a special taste and aroma, you can use peanut butter. 10. If desired, you can add carrots, cut into thin slices.

Bon appetit!

This dish is one of the most popular in Thailand. Cashew chicken stir-fry is served in any street cafe along with the incomparable Tom Yum soup or Pad Thai noodles. And this dish is very easy to prepare. Unlike Tom Yam, the ingredients for which are not so easy to find, products for this delicacy are certainly available in any city. Today is a very simple step by step recipe. Preparation will take no more than 20 minutes.

To prepare “Thai Cashew Chicken” you will need (calculation for 1 serving):

Chicken fillet - 100 grams

Onions - quartered

Garlic - 3 cloves

Baby corn and carrots - 40 grams

Green onions - 40 grams

Cashew nuts - 2 tablespoons

Dried and smoked chili (can be replaced with ground chili) - to taste

Judas ear mushrooms (ear mashroom), can be replaced with other mushrooms

Vegetable oil (refined sunflower, corn or any other without a strong odor) - 1 tablespoon

Refueling:

Thick oyster sauce - 1.5 tablespoons

Fish sauce (you can use soy sauce) - 1 tablespoon

Cane sugar (regular sugar will do) - 1 teaspoon

Water - 1/4 cup

We cut the chicken into thin long pieces and start chopping the vegetables. The list of ingredients seems impressive, but in fact, here are all the vegetables we will need for this dish.

It only takes a few minutes to prepare the vegetables. The onion quarter should be cut lengthwise into 2-3 parts. Chop carrots and corn into small pieces.

Mushrooms should not be chopped too finely. Just a few touches with a knife are enough. Cut the green onions into long pieces of 3-4 centimeters.

Dried and smoked chili peppers, one of the main ingredients in Thai cuisine, give this dish a special spicy taste and aroma. It may not be available in regular supermarkets, but dried chilies are certainly sold in online exotic food stores and are inexpensive. In principle, you can do without it by adding regular ground chili or even cayenne pepper to the dish.

Now let’s prepare a special sauce - this is the basis of the dish, without which the Thai flavor simply cannot be achieved. For the sauce, you definitely need a thick oyster sauce; a liquid sauce will not work, since we need a viscous consistency.

Place the oyster sauce in a small bowl, add fish sauce (can be replaced with soy sauce) and sugar. Add water and mix everything. This sauce is used in many dishes, including the famous Thai noodles Pad Thai. You can also fry any vegetables and meat with it, it will definitely turn out delicious.
This is what all the components of this dish look like right before frying.

To prepare this dish, you will need a wok or just a large frying pan with high walls. Turn the heat to medium and add oil. Throw the garlic into the pan and fry it for 10-15 seconds. We turn up the heat to high, and as soon as the oil gets hot, throw the chicken into the frying pan, wait 15 seconds until it sets into a crust, and then start stirring constantly.

The chicken only needs to fry for a few minutes. This way it will have time to reach condition, but not dry out and remain juicy. Add all the vegetables to the chicken except green onions, as well as nuts and sauce. Fry over high heat for 20 seconds, and then turn the heat down.

This is where you need to try the dish. It should be both sweet and salty, very harmonious in taste. If you don't have enough salt, add fish (soy) sauce; if it's not sweet enough, add sugar. The dish is ready when the water has evaporated and the sauce has thickened again. Vegetables should remain crunchy, not soft.

Remove the pan from the heat, add the green onions and stir. The dish is ready, you can put it on a plate and serve it to the table. Remember that Thai stir-fry food is prepared in small portions and is not refrigerated or reheated the next day.
