In addition to salt, the following herbs that grow in gardens are added to the marinade, a pinch at a time: cumin, dill, coriander, fragrant basil, mint, lemon balm. A few cloves of garlic are peeled and finely crushed into a paste and added to the marinade; garlic is an integral part of the marinade for shanks. In addition, you can also add black peppercorns and cloves. The entire contents of the marinade are thoroughly ground with your hands and mixed, turning everything into a fine paste until it releases juice and the mass becomes homogeneous.

This marinade should be thoroughly rubbed onto the prepared dish. Seasonings must be rubbed into the surface of the meat and skin as thoroughly as possible. To allow seasonings and spices to penetrate deeper into the shank, several shallow cuts are made and filled with marinade. The knuckle, grated and seasoned, is placed in a cool place for two days, formerly it was a cellar, now it is a refrigerator.

After the allotted period of time, the pickled shank is taken out of a cool place and cooked in an enamel pan for one and a half, or two hours over low heat; the shank turns out very tasty if it simmers in the oven. We clean the horseradish roots, grate them on a fine grater or meat grinder, or put them through a blender. The whole action will take a minimum of time, mix the resulting slurry with vinegar and water, you don’t need to add sugar, this is a matter of taste, if you want to reduce the sharpness, then add one teaspoon. To ensure that the horseradish seasoning is not white, you can add 2-3 tablespoons of beet kvass and mix thoroughly. To do this, you need a pork knuckle weighing no more than two kilograms and ground coriander, pitted prunes 250 g, garlic 4-5 cloves, red and black peppers (half a teaspoon each), mayonnaise, paprika 1 tablespoon, and rosemary ( can be replaced with spruce branches). Grind all the spices in a blender, except rosemary, rub the pork leg with them, marinate for 2-3 hours. Afterwards it is greased with mayonnaise and covered with rosemary. Wrap the prepared dish in foil (you can use a fireproof form as a safety net) and set to bake for one to two hours at a temperature of 150C.
