Contact with metal is also harmful for vitamins and minerals, because immediately after contact, an oxidative reaction begins, leading to a sharp decrease in them in the juice. This applies to all fruits and vegetables. For example, you can take an apple - if you cut an apple and leave it lying on the table, then in about 15-20 minutes (if it is a good natural apple without chemicals), it will begin to turn black. This occurs due to the contact of the iron contained in the apple with air. On lemons, the oxidation process is invisible, but it occurs much more rapidly compared to an apple.

Therefore:

— When squeezing juice from lemon, do not allow it to come into contact with metal. In other words, the juicer should not be metal.

How to make lemon juice

Everything is quite simple here. I describe the process for an auger juicer.

- Peel the lemon. Do not leave a white layer between the skin and the pulp. It gives a bitter taste to the juice, there is no liquid in it, so it is useless. It is better to peel a lemon with a ceramic knife. Buy a ceramic fruit peeler - it is small in size and relatively easier to use. I do not recommend using metal knives for the same reason - when cleaning, the lemon will begin to oxidize.

— Immediately cut the lemons into slices so that you don’t waste time cutting them while squeezing the juice. Remember that the juice must be squeezed out as quickly as possible so that the time of contact with air is minimized.

— If necessary, strain the resulting fresh juice through cheesecloth. I filter it myself every time, because... I like absolutely pure lemon juice without pulp. If you use the first two types of juicers, be sure to strain. If you use screws, then you can skip this point.

— Buy ​​a liter glass bottle with a tight-fitting cap in advance from the store.

— Fresh juice and lemonade should be stored in the refrigerator at a temperature around +1..+4 degrees Celsius. Freeze categorically it is forbidden. If the temperature drops below zero, a negative process will begin in which the amount of essential oils, vitamins and other beneficial substances will sharply decrease. There will be practically no point in consuming such fresh juice or lemonade.

- If you are just starting a cleanse, then you will need to store lemon juice. Fresh juice can be stored for a maximum of 2 hours in a closed glass bottle in the refrigerator. But if you dilute the fresh juice 1 to 1, the shelf life increases to 12 hours. Thus, if you squeezed juice in the morning, you need to immediately break it up with water in a ratio of 1 to 1, pour it into a bottle and put it in the refrigerator on the door - the temperature there is optimal. You can safely use this concentrate throughout the day. Then you can make lemonade from it in the proportion you need.
