Not everyone has the opportunity to buy ready-made cod fillets. That is why people very often buy a whole carcass of this fish. However, to prepare most dishes it is necessary to use fish fillets. Let's look at how easy, quick, and most importantly, how to properly cut cod into cutlets.

We would like to immediately draw your attention to the fact that there are many different ways in which you can cut cod, but we will tell you about the simplest one.

  • The fish carcass should be thoroughly washed and placed on a cutting board. The knife we ​​will use must be long and sharp
  • So, we cut off the tail part of the fish, the head and all the fins
  • There is black spittle inside the cod that needs to be removed. We cut them with a knife and, using our hands, remove them. If a little of this spittle remains inside the fish, it’s basically okay. They don’t give any bitterness, it’s just a matter of aesthetics
  • Now from the side of the head we begin to separate one part of the fish from the other. This is done by running a knife along the ridge of the cod. We got one part of the fish with a ridge, and the other without
  • We remove the ridge from the 2nd part of the fish, separating the ridge from the cod meat with a knife. Let's start from the head
  • Next you need to remove the skin. To do this, trim the skin at the tail and cut it off
  • Cod is not a bony fish, so once the skin is separated from the meat, the cutting process can be considered complete.


This kind of fillet can be used to make excellent minced meat for cutlets. The classic minced meat recipe is the following:

  • Cod fillet – 800 g
  • Onion, egg – 1 pc.
  • A small piece of loaf
  • Salt, pepper to taste


The loaf is pre-soaked in milk or water, and then all the ingredients are crushed and mixed, after which the resulting minced meat is infused for 20-25 minutes.

Let's start with baked cod. We will need:

  • Cod fillet – 2 pcs.
  • Onion – 1 pc.
  • Carrots – 1 pc.
  • Bell pepper – 1 piece
  • Juice of half a lemon
  • Salt, pepper, parsley
  • Baking foil


Let's start cooking.

  • Wash cod fillet, salt, pepper, sprinkle with lemon juice
  • Peel the onion and cut into rings
  • Peel the carrots and cut into strips
  • We also wash the bell pepper, peel it and cut it into strips.
  • Transfer the fillet to a piece of foil. Place vegetables next to the fish
  • Wrap the cod in foil as tightly as possible and place in an oven preheated to 180 degrees for 1 hour.
  • We take out the fish, carefully unfold the foil, sprinkle the cod with chopped parsley and serve

And finally, a recipe for delicious stewed cod. We need the following ingredients:

  • Cod – 500 g
  • Onion – 1 pc.
  • Butter – 30 g
  • Sour cream – 200 g
  • Salt, pepper, spices as desired

  • Wash the cod carcass, clean it and cut it into small pieces
  • Salt and pepper the fish
  • Peel the onion and grate it on the finest grater
  • Take a pan in which we will stew the cod and melt the butter in it
  • Place the fish in the pan and place the onion on top. Simmer the fish over low heat for about 15 minutes.
  • In the meantime, you need to prepare sour cream sauce. To do this, mix sour cream with salt and pepper.

Pollock fish cutlets with cottage cheese added- a great alternative to regular cutlets on a fish day. I already have several recipes on my blog and only this time I decided to use cottage cheese. It turned out amazing.

Fish cutlets with cottage cheese are tender, juicy and flavorful. I only recommend adding high-fat cottage cheese. And as a fish, you can use any sea fish; pollock or hake are perfect. This fish is practically boneless.

And so let's get started.

To prepare you will need:

  • Pollock -300 gr.
  • Onion - 1 pc.
  • Green onions – 2 pcs.
  • Cottage cheese -100 gr.
  • Chicken egg - 1 pc.
  • Salt, pepper and spices to taste.

Because my chief taster gave me a wonderful food processor. Then grind everything into minced meat, I will be in it. Although you can use a regular meat grinder.

Place onion, cottage cheese, pollock fillet and chicken egg in the chopper bowl. Add salt, pepper and spices.

Grind everything into mince at high speed.

Finely chop the green onions and add them to the minced fish. Mix everything.

Forming cutlets.

If desired, you can use different breading for these cutlets. For example, flour or breadcrumbs. This time I decided not to use anything. I fried it in vegetable oil. It turned out delicious.
