But today I want to tell you about pies cooked in the oven - even, smooth, rosy - very tasty, and they are also filled with fresh green onions and boiled eggs. The beauty of these pies is that you can eat them the next day, and they remain tender and soft - like just out of the oven, because we don’t put eggs in the dough. Of course, it’s more convenient to bake such pies in spring and summer, when onions begin to grow in the beds, but in winter, you can buy a fresh bunch of green onions at the market or plant several rosettes of onions in the ground (or just put them in water) and enjoy this splendor all winter long until the next summer season.   • dry instant yeast - 2 tsp.
  • flour - 600 g
  • salt - 2 tsp.
  • sugar - 2 tbsp. l.
  • butter - 60-70 g
  • milk - 410 ml

Baked pies with green onions and eggs:

Dissolve yeast and sugar in warm milk. Melt the butter. Pour in melted butter, add salt. Add flour in portions, knead soft elastic dough.

If you knead the dough by hand, you may need a little more or less flour, it depends on the quality of the flour used.

Cover the bowl with the dough with cling film or a kitchen towel and put it in a warm place for 1-1.5 hours. The dough should increase in size by 2-3 times.

My dough was kneaded and proofed in the bread maker. I also bake very tasty ones from this dough.

Meanwhile, prepare the filling for the pies. Boil the eggs, wash and dry the green onions. Finely chop the green onions, cut the eggs into cubes. Mix eggs with onion, salt and pepper to taste. Add 2-3 tbsp. l. vegetable or melted butter. Mix.

Place the risen dough on the table and roll it into a bun. Divide the dough into equal pieces. Roll out each piece of dough into a round cake with a rolling pin, and place the filling in the center of the cake.

    Warm the milk to room temperature and dissolve in it all the yeast, one tablespoon of sugar and a pinch of salt. Let sit for 20 minutes to allow the yeast to ferment.

    In another container, mix the egg with softened butter. Add the remaining sugar, salt, stir, then pour in the milk with the yeast diluted in it.


    Pour the flour into a deep bowl, make a small depression in the center and pour the resulting mixture into it, add vegetable oil and start kneading the dough for at least 10 minutes.

    If the dough turns out watery, then you should gradually add flour to it, without ceasing to knead it. The dough for pies should be plastic, but not too dense. Cover the kneaded dough with a towel and place in a warm place for 1.5 hours.


    While the dough is rising, make the filling for the pies. Boil hard-boiled eggs, chop them finely.


    Chop the green onions, add salt and mix with chopped eggs. If you prefer stewed cabbage, cook pies with cabbage and egg .

    Season the filling with vegetable oil and mix thoroughly again.


    When the dough has risen, start forming the pies on a floured table: pinch off small pieces of the dough and form them into flat cakes.


    Place one tablespoon of filling in the middle of each cake and carefully pinch the edges of the pies.


    Heat vegetable oil in a frying pan and fry the pies on both sides for a few minutes over moderate heat.

    Next, let's start preparing the filling. Hard-boil chicken eggs, cool, peel and finely chop with a knife. Wash the green onions and chop finely. To make the filling juicy, it is recommended to crush the green onions and salt in a mortar.

    Mix the mixture with chopped egg, add sunflower oil (1 tablespoon), and pepper. The filling is ready.

    Cut the dough into relatively small pieces and roll out with a rolling pin, giving them a round shape. Place egg-onion filling (1 teaspoon) on each circle of dough.



    Pour a little vegetable oil onto a baking sheet and place the pies in an oven preheated to 190°C.


    Fry them on each side for 12–15 minutes.

After the specified time, separate small pieces from the main mass, roll them into flat cakes about half a centimeter thick and cut out circles of a suitable size. And now the yeast dough. Let's make pies out of it with onions, eggs, and rice. To do this, soak a glass of rice the night before to make it softer. You can then put it in a water bath, pour boiling water over it as you would for porridge. Or just boil separately until done. Then rinse. Prepare the onions and eggs as described in the previous recipe. Mix the minced meat ingredients, salt and pepper, sprinkle with chopped dill and parsley. By the way, if you compare calorie content, an onion pie with an egg does not contain much lower calories than with an egg and rice. But let's get back to the test. For it, you should put a dough: dissolve yeast in warm water or milk (for 1 kilogram of flour you need 2 and a half glasses of milk or whey and 30 g of yeast), add half of the prepared flour, mix well to avoid lumps. Of course, sift the flour in advance. The dough should rise; to do this, place it in a warm place for about an hour or a little longer. Then add the rest of the products: butter - 3 tablespoons, sugar - 1-2 of the same, salt - 1 teaspoon, teaspoon. And beat in 2 eggs. Stir again, add the rest of the flour and knead the dough thoroughly until it begins to pull away from the walls of the bowl or pan.

Cover the workpiece again and leave it warm for another hour and a half. The amount of product will increase in volume. After this, the dough is beaten again, left for the last time for “revenue”, then you can work with it. Place the entire mass on the kitchen table, divide into small pieces weighing 50-60 g, roll into mugs, and let stand for 15 minutes. Now roll them into flat cakes a centimeter thick, lay out the filling, seal, leave for 10 minutes to rise. Pour vegetable oil into a cast iron or deep frying pan, heat it and fry the pies in it, turning until browned. Place the finished ones on a paper towel to absorb excess fat.

To start making pies with green onions and eggs, you need to prepare the ingredients. To work with yeast dough, you must use products at room temperature.
First melt the butter over low heat and let cool to room temperature.
Only the milk will need to be heated to a temperature of 36-38 degrees - this is a comfortable temperature for the yeast to work. By the way, you can prepare baked pies with green onions and eggs using kefir. It will be delicious too.
The dough kneads very quickly. In a bowl, mix milk with dry yeast (you can use fresh yeast - 25 grams), add sugar. Stir well, trying to dissolve the sugar and yeast.
Next, pour in the melted and cooled butter or margarine. Mix again until evenly distributed.
The next step is to add the sifted flour: in small portions, mixing thoroughly.
When the dough becomes thicker, you can knead it with your hands on a floured table. For convenience, we also sprinkle the dough on top. The dough should end up soft and elastic. Now it doesn’t stick to the table or hands at all.
Gather the dough into a ball, cover or wrap in cling film. Let him rest for twenty minutes. The gluten will swell, the dough will become more homogeneous and rise slightly during this time.
Prepare the filling while the dough rests. It can be anything, but it’s better not raw: this way the pie will cook faster. Today I'm using a spring filling: green onions with boiled eggs.
Boiled eggs should be cut into cubes. You need to boil them in salted water for about five minutes, hard-boiled.
Let's cut the green onion, not too large. The proportions of onions and eggs can be different: you can take more or less of something.
Mix everything and add salt to taste. You can add ground black pepper for flavor. Pour in vegetable oil: this way the filling will not turn out dry. Mix and the filling is ready.
Take the dough: you don’t need to knead it. This is a very quick yeast dough that does not require long processing and proofing! Divide into equal pieces so that the pies are the same size.
You don't need any flour or a knife for cutting. I tear off the dough with my hands: it doesn’t stick and it’s very convenient to work with.
Roll the pieces into balls. We take one, pressing with our fingers, forming an even circle - a flat cake. In the middle of which we put the filling.

  • dry yeast - 2 teaspoons;
  • sugar – 2 tbsp. spoons;
  • salt – ½ teaspoon.

First you should prepare the yeast - pour it into warm milk (half a glass will be enough) and mix it thoroughly; after 20 minutes, when foam has formed to the edges of the dish, you can start making the dough.

In a large bowl, grind the egg with sugar and salt, then add milk and dissolved yeast. Carefully pour in half a glass of flour and stir constantly. When the dough is almost ready, warm melted butter is poured onto it and mixed thoroughly.

The finished dough should not stick to your hands. The bowl should be covered with a towel and set aside in a warm place for it to rise, then knead it and repeat the procedure.

Soda dough

Ingredients:

  • flour – 500 g;
  • butter or margarine – 100 g;
  • kefir or milk – 200 ml;
  • salt – ½ teaspoon;
  • sugar – 3 teaspoons;
  • baking soda or baking powder - 1 teaspoon.

Mix flour with margarine, in order to make it easier, you need to give it time to stand in a warm place until it becomes soft. Next, salt, sugar and soda are added. The mixture is poured with kefir and an elastic dough is kneaded, which is then placed in the refrigerator for 45–60 minutes. After being in the cold, the dough is ready for further use.

Puff pastry

Ingredients:

  • flour – 500–600 g;
  • beer - 200 ml;
  • salt – ½ teaspoon;
  • butter – 50–70 g.

Salt is mixed with flour, beer is added and the dough is kneaded. The dough should be elastic and stick well to your hands. After kneading, place it in a warm place for half an hour.

The rested dough is divided into 5 parts, which are rolled out thinly and brushed with melted butter. In this way, 4 sheets are processed, which are stacked on top of each other, the last sheet is not smeared. Next, make an envelope from the dough, folding the four corners of the dough towards the center, and roll it out thinly again.

Choosing the filling

While the finished dough is “resting,” there is time to prepare the filling. Options are also possible here.

The amount of filling is considered depending on the previously proposed volume of dough.

Classic filling option 1

Ingredients:

  • green onions or leeks - 500 g;
  • chicken eggs – 6 pcs.;
  • vegetable oil – 5 tbsp. spoon;
  • salt – ½ tbsp. spoon.

First, eggs are prepared, which are placed in cold water and placed on fire. After boiling, cook for 10 minutes, after which the eggs are cooled and peeled. Green onions are thoroughly washed and dried to remove excess water (leave to drain in a colander or dab with a towel). After preparing the food, you need to finely chop the eggs and chop the onion.

Next, pour vegetable oil into a saucepan with a deep bottom and heat it well, then pour chopped onions and salt onto the bottom. Stir vigorously for 10–15 seconds and remove from heat before the onion changes its taste and external qualities.

Fried onions are mixed with eggs - the filling is ready.

Classic filling option 2

Ingredients:

  • onions - 500 g;
  • chicken eggs – 6 pcs.;
  • salt – ½ tbsp. spoon.

The eggs are dipped in cold salted water and boiled for 10 minutes after boiling, then allowed to cool and carefully peeled.

Peel the onion and finely chop it into squares no larger than 0.5x0.5 cm. Pour the onion into a frying pan with well-heated oil, salt it and fry until golden brown.

Finely chopped eggs are mixed with onions - the filling is ready.

Egg with onion and rice

Ingredients:

  • green onions - 500 g;
  • chicken eggs – 4 pcs.;
  • rice – 100 g;
  • dill – 50 g (small bunch);
  • vegetable oil – 3 tbsp. spoon;
  • butter – 70 g;
  • salt – ½ tbsp. spoon.

Green onions are washed and finely chopped. After boiling, the eggs are boiled and cooled for 10 minutes, after which they should also be cut. The rice must first be soaked in cold water for 30 minutes, then change it several times until transparent and cook until tender (on average 30–40 minutes). We use water in a 2:1 ratio (2 – water, 1 – rice). Add butter to the cooked rice and cool.

All ingredients should be combined and mixed well - the filling is ready.

Egg with onions and mushrooms

Ingredients:

  • onions - 500 g;
  • chicken eggs – 4 pcs.;
  • vegetable oil – 6 tbsp. spoon;
  • mushrooms (champignons) – 300 g;
  • salt – ½ tbsp. spoon.

Eggs should be boiled and cooled. Heat oil in a deep-bottomed frying pan and add finely chopped onion. Mushrooms are cut into small pieces and added to the pan when the onions are almost ready. Champignons should be fried without a lid so that excess moisture evaporates faster.

The finished ingredients are salted and mixed - the filling is ready.

Cooking method

For those who like a healthier diet, we suggest baking the pies in the oven, and for those who like crispy crusts, frying them in a frying pan is more suitable.

Bake in the oven

The yeast dough is laid out on the table where modeling will take place and rolled into a bun. To distribute the dough evenly, divide it into ball pieces. Each lump of dough is rolled out into a circle with a rolling pin, in the middle of which the filling is placed. You need to pinch the edges well and form a pie of the shape you want - round, oval.

The puff pastry is cut into equal rectangles depending on the desired size of the pies, each of which is rolled out thinly without distorting the original shape. The filling is laid out on one edge of the dough, and the edges of the rectangle should be coated with egg white for better adhesion. Cover the filling with the second edge of the dough, which is not coated, and gently press along the entire perimeter so that the edges stick together well. For beauty, you can run a fork along the ends to leave a simple design on them.

Grease a baking sheet with vegetable oil or use special baking paper. Carefully place the pies, then brush them with yolk and set aside in a warm place for 15 minutes.

At this time, you need to preheat the oven to 180 degrees, then place the pies in it for 20-25 minutes - the pies are ready.

Fry in a frying pan

Sprinkle the table on which we will make the pies with flour and roll out the dough to a thickness of no more than 3 mm. Next, cut out the cakes - squares, circles, ovals, rectangles. The dough is filled with filling, after which it is wrapped and formed into a beautiful pie. Before cooking the pies, they should be “flatten” a little until they are flat so that the dough is thoroughly fried and does not remain raw.

Only a frying pan with a deep bottom is suitable for frying pies. Place the pies in heated vegetable oil and fry for no more than 7 minutes on each side until a beautiful golden crust forms - the pies are ready.
